I really quite like the British way on doing a stick. I have it on my to do list as I've lots of straight pieces of chestnut avail and quite like that sheppards crook.

Chestnut shank on a contrasting wood makes a very good looking market crook ,Chestnut is a favourite of mine and the bark gives the shank a lot of protection naturally a few coats of oil and it will look great.I havnt had any need to straighten chestnut as of yet they do grow straight like hazel.

they come close to the looks of rams and buffalo horn in looks..

I would advise you to out a hardwood dowel across the top of a crook it will give it more strengh.

I carved a sassafras wood spirit topper back in October. I was going to start a spiral shaft stick for it today, but home repairs caught me off guard. Hot water heater went out and I had to play plumber and replace it. Can't complain too much the old one's been in this house since it was built in 1988.
